This refreshing low calorie version of the 1950’s Pina Colada is made with Malibu Rum, Pineapple Juice, Pina Colada Wine (Armen’s Barrels) white or sparkling wine and club soda. Armen’s Barrels is a family-owned award-winning distillery located in Pittsburgh, Pennsylvania. Their Pina Colada Wine Cocktail is part of the Florena collection (named after his wife) and is based with 83% award winning Niagara white wine, oak barrel aged and finished with natural coconut and pineapple. Ingredients
- 2 oz Coconut Rum (Malibu)
- 4 oz Pineapple Juice
- 2 oz Pina Colada Wine (Armen’s Barrels) or white/sparkling wine
- Club Soda to top
- Pineapple Wedge and Fronds for garnish
- Maraschino Cherry for garnish
Method
- Prepare your garnish. Pull two fronds from the top of the pineapple, rinse and dry. Set aside. Cut the top and bottom off the pineapple to create two flat surfaces. With the pineapple standing on the flat bottom cut it in half lengthwise. Cut the halves again to create 4 long pieces. Cut each piece into 1/2-inch wedges. Cut a slit in a wedge off center halfway up (this will allow you to slide the pineapple onto the glass with most of the pineapple facing outward). Place in a baggie in the fridge until you’re ready to make the cocktail to prevent browning. Store all the other pieces in a container in the fridge. Dip out a maraschino cherry (pick a good one) from the jar, remove stem and dry with a paper towel. Cut a small slit in the bottom to slide onto your glass. Set aside.
- Make your cocktail. In a wine glass filled with ice, add the Malibu rum, pineapple juice, Pina Colada Wine Cocktail or white wine (you could also use sparkling wine or Prosecco and skip the club soda) and club soda. Stir gently until blended.
- Garnish. Slide the pineapple wedge and maraschino cherry onto the side of your glass. Add the two pineapple fronds. Cheers!
