Swimming Pool Cocktail

The swimming pool cocktail was created in 1979 by German bartender Charles Schumann. This refreshingly creamy version is made with vodka, Malibu Rum, pineapple juice and Blue Curacao. It is similar to a pina colada in flavor but with Blue Curacao swirled on top for a swimming pool marble effect. This is perfect for enjoying by the pool or anywhere on a hot summer day. Enjoy!

Ingredients-Serves 1

1 oz. Vodka

1 oz. Malibu Rum

2 oz. Pineapple Juice

1 oz. Heavy Cream

1/2 oz. Blue Curacao plus a splash for marble effect

Pineapple and Maraschino Cherry for garnish

Directions

Fill a hurricane or tall glass with crushed ice.

In a cocktail shaker or jar with ice, mix the Vodka, Malibu Rum, pineapple juice, heavy cream and Blue Curacao.

Shake 10-15 seconds to blend all ingredients.

Strain into glass over crushed ice.

Pour a little Blue Curacao around the inside edge of drink so the Blue Curacao filters down the sides creating a marble effect.

Garnish with pineapple wedge and maraschino cherry. Add a fun straw. Cheers!

How to cut a pineapple wedge

Using a whole fresh pineapple, cut the top and bottom off to create two flat surfaces. With pineapple standing up, cut lengthwise in half and in half again to create 4 long pieces. Cut into 2–3-inch wedges. Slid onto cocktail skewer and/or cut slit in middle of wedge to slide onto edge of glass.
