The Pina Colada was originally created in San Juan, Puerto Rico in 1954. Relax with this delicious patriotic version made with rum, coconut, strawberry, pineapple and blue curacao. Enjoy!
Ingredients – Serves 2
3 oz Rum
6 oz Pineapple juice
4.5 oz Cream of Coconut
2 cups Strawberries (1 cup fresh and 1 cup frozen)
2 oz Blue Curacao
2 oz Simple Syrup * boil 1 cup sugar to 1 cup water, stir and let cool.
Ice
Pineapple wedge for garnish
Directions
- In a blender add Rum, pineapple juice, cream of coconut, 1 oz simple syrup and 5 cups ice. Blend until smooth.
- Separate 2/3 of the mixture into a different container. You may need to use a spoon.
- Add 1 cup frozen, 1 cup fresh strawberries and 1 oz simple syrup to the 1/3 remaining mixture in blender. Blend until smooth.
- Pour/spoon the blended strawberry mixture into glasses to create the bottom layer.
- Add 1/3 of the original separated mixture into glasses to form the middle layer.
- Rinse blender and pour the remaining 1/3 original mixture back into the blender with Blue Curacao and 1 1/2 cups ice. Blend until smooth and spoon into glasses to create the top layer.
- Add pineapple wedge for garnish. Add a straw. Cheers!
