For the Blue Layer
4 cups crushed ice
1 1/2 oz Tequila (silver)
1 oz Cointreau
1/2 oz lime juice (fresh squeezed)
1 oz Blue Curacao
1/2 oz simple syrup
Directions
- Make the simple syrup. Boil 1 cup water to 1 cup sugar. Let cool. Any extra simple can be kept in a glass jar in the fridge for up to 4 weeks.
- Make each layer separately in a blender and blend until smooth. Spoon into a separate container and place in the freezer. Rinse the blender in between layers.
- After you are done making all the layers, take this time to straighten up your bar/kitchen before you start assembling the cocktails. It will help make your life easier:)
- Place some cocktail (or regular) sugar on a small plate. Run a lime wedge around the edge of the margarita glasses and roll the edges in the sugar.
- Using a spoon (rinsing between layers) scoop the blue layer first, filling 1/3 of the glass. Then scoop the white layer, 1/3 of the glass, then the red layer to the top. Pro tip: It helps to add the scoops around the edges first then fill in the middle.
- Slice the end of a strawberry and place it on the side of the glass to garnish. Add a straw if desired. Cheers!
