Yo Ho, Yo Ho! A pirate’s life for me! The Pirate Smile cocktail is an original tiki cocktail with a pirate edge, aargh mateys! Similar to the Zombie cocktail, this tropical mixology masterpiece consists of 2 types of rum, Allspice Dram, Golden Falernum, cinnamon syrup, Orgeat, lime, grapefruit, orange and pineapple juice and passion fruit syrup. It’s topped off with a cute pirate boat garnish for fun! Drink up, me hearties!

Ingredients -Serves 1

  • 1 oz Jamaican Rum (Plantaray)
  • 1 oz Cuban Rum (Bacardi Gold)
  • 1/4 oz Allspice Dram (St. Elizabeth)
  • 1/4 oz Golden Falernum (The Bitter Truth)
  • 1/2 oz Cinnamon Syrup (1 cup water, 1 cup sugar and 3 cinnamon sticks)
  • 1/2 oz Orgeat (Liber and Co)
  • 3/4 oz Lime Juice
  • 1/4 oz Grapefruit Juice
  • 1/2 oz Orange Juice
  • 3/4 oz Pineapple Juice
  • 1/4 oz Passion Fruit Syrup
  • 1 orange (washed and dried)
  • 2 limes (washed and dried)

Method

  1. Make the cinnamon syrup. In a small saucepan, combine 1 cup water, 1 cup sugar and 3 cinnamon sticks. Bring to a boil, stirring occasionally. Remove from heat and let set to infuse and cool at least 30 minutes.
  2. Make the pirate boat garnish. Cut an orange in half and set aside (you could also use a lemon if your glass diameter is smaller). Cut a lime in half lengthwise. Cut each half into 3 wedges. Remove the pulp by peeling off the pith (you’ll need 6 pieces). Pierce 3 lime pieces onto a skewer from end to end of the peel to create a “sail”, slightly folded, close together onto a skewer about an inch from the top. Cut the bottom of the skewers leaving about 2 inches below. Take another skewer and pierce 2 lime pieces the same way and cut the bottom 2 inches. Take a third skewer and pierce 1 lime piece leaving 1 inch on top and 2 inches below. You should have 3 different size pieces of skewers with lime. Attach them to the “orange boat” by piercing the long, med and small skewers into the orange half to create ship masts.
  3. Make the cocktail. In a cocktail shaker with ice, add the Jamaican rum, Cuban rum, Allspice Dram, Falernum, cinnamon syrup, Orgeat, lime juice, grapefruit juice, orange juice, pineapple juice and passion fruit syrup. Shake to combine 30 seconds and open pour into a tiki mug. Add more crushed ice if needed.
  4. Garnish. Add the pirate boat garnish on top and straw. Cheers!
