Peepmosa

Nothing says Easter brunch more than a Mimosa (champagne and orange juice), so why not make it even more fun and festive with a Peepmosa! This cocktail/mocktail dual is so easy to make and a perfect Easter treat that everyone can enjoy. This delicious pineapple-orange cocktail features a marshmallow and coconut rim which represents the bunny’s fur and is garnished with an adorable peep. Peeps have been an iconic Easter candy for over 70 years. Can you guess what the most popular peep colors are? Yellow is number one followed by pink. Enjoy!

Equipment:

  • Jigger
  • 2 small plates
  • Champagne glasses
  • Skewer for garnish

Ingredients: Serves 1

  • Marshmallow Creme (I used Jet Puffed)
  • Coconut Flakes
  • 2 oz Orange Juice
  • 2 oz Pineapple Juice
  • Champagne
  • Mountain Dew or Sprite (for the mocktail)
  • Peeps

Method:

For the cocktail:

  1. Make sure all liquid ingredients are well chilled prior to starting.
  2. Add a small amount of marshmallow creme (about a TBSP) to a small plate and a small amount of coconut flakes onto the other plate. Roll the edge of the champagne glass into the marshmallow creme and then roll in the coconut flakes.
  3. Add 2 oz orange juice and 2 oz pineapple juice directly into the champagne glass.
  4. Fill to the top with champagne or prosecco (I used Cooks Brut)
  5. Add a Peeps garnish either on a skewer (I used a green frill pick to represent easter grass) or 1 directly on top in the glass. Cheers!

For the mocktail:

Repeat all steps above except sub the champagne or prosecco for Mountain Dew or Sprite. Enjoy!
