Fun Craft Cocktails

Named after the hit TV show, Miami Vice, the Miami Vice cocktail originated in the 1980s and was very popular in the nightclubs and bars in Miami, Florida. Although, it’s exact origins of who actually created this and at what bar is unclear, it is basically an equal combination of Strawberry Daiquiri and Pina Colada layered together in one delicious cocktail. It is said that bartenders apparently hated making this cocktail when ordered (especially if they had to make it from scratch) but luckily frozen slushie machines saved the day and was as easy as simply pushing two buttons. I’ve teamed up with The Bitter Truth and added some of their Golden Falernum to the Pina Colada portion (optional) which adds a beautiful subtle spiced note and blends perfectly with the coconut. Ingredients – Serves 1

For the Strawberry Daiquiri

  • 1 oz Rum (Gold)
  • 1 cup Strawberries (Fresh or Frozen)
  • .5 oz Lime Juice
  • .5 oz Simple Syrup
  • 1 cup Crushed Ice

For the Pina Colada

  • 1 oz Rum (Gold)
  • .5 oz Falernum (The Bitter Truth)
  • 2 oz Pineapple Juice
  • 2 oz Cream of Coconut (Coco Lopez)
  • 1 cup Crushed Ice

Method

  1. Make the simple syrup. Combine 1 cup water and 1 cup sugar in a small saucepan. Stir. Heat to simmer and until sugar is dissolved. Remove from heat and let cool. Transfer to a glass container and keep in fridge for up to 4 weeks.
  2. Make the Strawberry Daiquiri. Wash and dry 5-6 strawberries, remove green stems and cut into small pieces (if using fresh). Add the crushed ice to a blender. Add the rum, strawberries, lime juice and simple syrup. Blend/whip until smooth. Pour into a hurricane glass 1/2 way up. Set in freezer.
  3. Make the Pina Colada. Wash and dry the blender and add the crushed ice. Add the rum, falernum, pineapple juice and cream of coconut. Blend/whip until smooth.
  4. Make the cocktail. Remove the hurricane glass in the freezer and tilt at a 45-degree angle. Use a spoon to push the strawberry daiquiri up one side. Pour the Pina Colada into the open side. Garnish with a fun straw. Cheers!
