Transport yourself to the tropics with this Coconut Pineapple Daiquiri! Imagine yourself on a beach. You can hear the sound of ocean waves, see palm trees swaying in the balmy breeze, and feel the warm sand in between your toes as you sip on this coconut pineapple daiquiri. The Daiquiri originated in Cuba in 1896 and was invented by an American mining engineer, Jennings Cox, who was in Cuba during the Spanish American War. The Daiquiri was named after a beach town and iron mine in Santiago De Cuba with the same name. It originally consisted of rum, citrus juice, and sugar and was mixed in a tall glass with ice but later evolved to be mixed in a shaker and served in a chilled coupe glass. Between the 1920s-30s, the daiquiri underwent another transformation when a bartender in Cuba blended it with shaved ice and the frozen Daiquiri was born. This delicious frozen version is a dual recipe that features both a cocktail AND a mocktail and is perfect to sip on and enjoy on a hot summer day. Salud! (Cheers in Spanish)

For the Cocktail
Ingredients – Serves 1
3 cups crushed ice
1 1/2 oz Rum (white)
1 oz Malibu Rum (coconut liqueur)
2 oz Coconut Milk
1 oz Pineapple Juice
1/2 oz Simple Syrup
1/2 oz Lime Juice (freshly squeezed)
For the Garnish

Directions
- Make the simple syrup first. Add 1 cup water to 1 cup sugar and boil. Let cool. Extra simple syrup can be kept in the fridge for up to 4 weeks in a glass container. Recycling a glass beverage bottle works great for storage.
- Add 3 cups crushed ice to the blender.
- Add Rum, Malibu Rum, coconut milk, pineapple juice, simple syrup, and lime juice. Blend until smooth.
- Pour into glass and garnish with a lime wheel and flower. Add a straw. Salud!
For the Mocktail
Ingredients – Serves 1
3 cups crushed ice
3 1/2 oz Coconut Milk
2 oz Pineapple Juice
1/2 oz Simple Syrup
1/2 oz Lime Juice (freshly squeezed)
Directions
Repeat steps 1-4 using mocktail ingredients. Salud
