The Blue Lagoon cocktail was invented in the 1960s-70s at Harrys New Bar in Paris France. It became especially popular in the 1970-80s due to its beautiful electric blue color from the Blue Curacao, a liqueur made from dried Laraha citrus peels grown on the island of Curacao. The cocktail is thought to be named after the Blue Lagoon, an iconic geothermal spa in Iceland. This easy to make cocktail basically consists of vodka, blue curacao and lemonade. I’m using fresh lemon juice and simple syrup which mimics the lemonade but feel free to use lemonade if desired. Cheers!
