Barbietini drink

The Barbie doll was created in 1959 by Mattel president, Ruth Handler. After observing her daughter playing with paper dolls and pretending they were students, cheerleaders, and career women, she wanted to create a more adult 3-dimensional doll. At the time, most dolls were infant baby dolls and she felt there was a gap in the market. She named the Barbie doll after her daughter, Barbara, and the Ken doll was named after her son, Kenneth. The Barbie doll became very popular worldwide and inspired girls to dream big and aspire to whatever career they wanted in life. Barbie has been everything from a doctor to an astronaut to a career woman. Celebrating girl power and all things pink, I bring to you the Barbietini! This fun dual cocktail and mocktail recipe features dragon fruit which creates a bright pink color. It is the ultimate girly drink (it’s ok, men can drink it too:) Enjoy!

Equipment
Cocktail Shaker
Jigger
Muddler
Hand Strainer
2 Small Plates
Martini Glass

Ingredients
1/8 cup Pink Dragon Fruit (I used frozen, thawed)
2 oz Strawberry Vodka (Smirnoff)
1 oz Malibu Rum
1 oz Pineapple Juice
1 oz Simple Syrup
Pink Edible Glitter
Strawberry Soda to top

For the Mocktail
Use all ingredients except sub the Vodka and Rum with the ingredients listed below:
Strawberry Soda (sub for Strawberry Vodka)
1 oz Coconut Water (sub for Malibu Rum)

For the Garnish
Honey
Pink Cocktail Sugar (for rim)
Pink Rock Candy Sticks (I used Candy Envy Brand)

Directions

  1. Make the simple syrup if you don’t already have some on hand. Boil 1 cup water to 1 cup sugar, stir, and let cool. Store leftover simple syrup in the fridge.
  2. On 2 small plates, add a small amount of honey on 1 plate and the pink cocktail sugar on the other. Roll the rim of the glass gently in honey then in the pink sugar (Pro tip – a gentle rolling, tapping movement works best).  
  3. Add 1/8 cup dragon fruit (thawed) to a cocktail shaker with no ice. Gently muddle the fruit to break it up and create the juice. Add the Strawberry Vodka, Malibu Rum, pineapple juice, simple syrup, and a small amount (pinch) of edible glitter. Dry shake with no ice. Add ice and shake again until very cold.
  4. Using your cocktail strainer and a hand strainer, double strain into the martini glass (this will catch all the black seeds from the dragon fruit).
  5. Pour strawberry soda into the top and garnish with a rock candy stick to represent the olives. Cheers!

For the mocktail
Follow steps 1-5 with the subs described above. Do not add the strawberry soda until the end.
