Color Changing Margarita

Have you ever seen a margarita change colors before your eyes? Want to know the secret to these magical margaritas? Ok, I’ll tell you. The magic is in the ice cubes and the secret ingredient is……cabbage! I know it sounds strange, but I promise you won’t taste it at all. Check out this awesome recipe below.

But first, here’s a little history about the origins of the margarita. Margarita means “daisy” in Spanish. Although there are different versions of who exactly invented it, one story claims it was invented in 1938 by Carlos (Danny) Herrera who owned a restaurant in Baja California. Its rumored he made it for Ziegfield showgirl Marjorie King because she was allergic to many liquors except tequila.

Heres’ how to make the color changing margarita:

Ingredients– Serves 1

2 c. sliced purple cabbage

4 c boiling water

1 1/2 oz silver tequila

1 oz Cointreau (orange liqueur)

3/4 oz fresh squeezed lime juice

1/2 oz simple syrup *boil equal amounts sugar and water (1 cup sugar to 1 cup water) stir and let cool.

Pink Himalayan or Kosher salt for rim

Lime for garnish

Directions

  1. Place sliced cabbage in a large heatproof bowl. Pour boiling water over cabbage and let sit until the water turns a deep blue (about 5 min). Strain out cabbage and let water cool.
  2. After the water is cooled, pour water into ice cube trays and freeze until solid, at least 4 hours.
  3. Make a small slit in the center of a lime wedge and run it around the rim of the margarita glass. Pour some salt onto a small plate and roll the outer edge of the glass in salt (rolling only the outer edge will help prevent the salt from falling in your drink). You can also just salt half your glass or not at all, if you prefer.
  4. Add the color changing ice cubes to the margarita glass.
  5. In a shaker cup or jar with regular ice, combine tequila, Cointreau, lime juice and simple syrup. Shake to combine and strain into margarita glasses.
  6. Garnish with a lime.
  7. Enjoy!Pairs well with- Chips and Salsa
