Add a sophisticated touch to your Valentine’s Day with this Banana Berry Champagne Daiquiri. The Daiquiri, which originated in 1898 in Cuba, is a classic tropical cocktail consisting of Cuban rum, lime and sugar. The Banana Daiquiri was created in 1953 at St. Thomas Mountaintop bar in the US Virgin Islands by British sea captain George Soule and gained popularity in the 1950’s-70’s by Harry Yee in Hawaii. It was usually frozen and blended and later evolved into fruity and sparkling festive versions with a tropical base. I used Tiki Lovers Banana Rum for this cocktail, and it is exceptional. Made from premium Caribbean rums from Jamaica, Barbados and Trinidad with natural banana extracts, this rum perfectly balances the depth and warmth of the dark rum with the fruity essence of sun ripened bananas. Ingredients – Serves 1
- 1.5 oz Tiki Lovers Banana Rum
- .75 oz Strawberry Syrup (2:1)
- .5 oz Lime Juice
- 2 cups Strawberries (8 fresh or frozen)
- Champagne to top
- 1 Fresh Strawberry Heart for garnish
- Red Sugar for garnish
- 3-4 drops Red Food Dye for ice mold
- 1 tsp Clear Edible Glitter for ice mold
Method
- Make the Ice Rose Mold. Add 3-4 drops of red food coloring and 1 tsp clear edible glitter to 16 oz of filtered water in a large Pyrex measuring cup or similar. Stir. Fill the mold and place in the freezer. It will take 4-6 hours to freeze.
- Make the Strawberry Syrup. Wash and dry (or thaw) 6 strawberries. Cut into quarters and place in a small saucepan. Add 1 cup water and 2 cups sugar. Bring to boil over medium heat. Stir. Remove from heat and let cool at least 30 minutes to infuse.
- Make the Garnish. Wash and dry a fresh strawberry. Pinch off the green top. Cut a V shape in the top and remove the piece. Cut straight down the front and back of the strawberry to reveal the inside. Sprinkle red sugar onto the strawberry and slid onto cocktail pick. Set aside.
- Make the Cocktail. Add 2 quartered strawberries into a cocktail shaker with no ice. Muddle. Add the banana rum, strawberry syrup, lime juice and ice. Shake to combine. Add the ice rose to a chilled coupe glass and strain the cocktail over it. Add champagne to top. Cheers!
