Bramble

The Bramble cocktail was created in 1984 by Dick Bradsell, a bartender at Fred’s Club in Soho, London, England. He wanted to create a truly British cocktail, so when a rep brought him Creme de Mure (blackberry liqueur) from France to try, he knew he had his special ingredient. A bramble is a bush that blackberries grow on, and the cocktail was inspired by his picking blackberries during his childhood on the Isle of Wright. It is basically a Gin Sour with blackberry liqueur drizzled over the top with lots of crushed ice. The cocktail became very popular with the hip and elite crowd who frequented Fred’s Club (Boy George, Siouxsie and the Banshees, etc.) and ultimately became a modern classic from the 80’s. I used the award-winning Dingle Gin from Ireland in this cocktail, and it is excellent. It features local Irish ingredients such as rowan berry, fuchsia, bog myrtle. hawthorn and heather and was named World’s Best Gin and World’s Best London Dry Gin in 2019. Cheers!

Ingredients – Serves 1

  • 1.5 oz Gin (Dingle)
  • .75 oz Lemon Juice (fresh squeezed)
  • .5 oz Simple Syrup
  • 1 oz Blackberry Liqueur (Drillaud)
  • Lemon Wheel for garnish
  • 2-3 Blackberries for garnish

Method

  1. Make the Simple Syrup. Add 1 cup water and 1 cup sugar to a small saucepan. Stir. Heat on medium until boiling. Stir. Remove from heat and let cool. Pour into a glass bottle and keep in the fridge for 4 weeks.
  2. Make the Cocktail. Add the gin, lemon juice and simple syrup to a cocktail shaker with ice. Shake to combine and strain into a crushed ice filled lowball glass. Pour the blackberry liqueur over the top.
  3. Garnish. Add a lemon wheel and blackberries for garnish. Cheers!
