Surfer Boy

Ride the wild surf with the Surfer Boy cocktail! This Fun Craft Cocktails original cocktail was inspired by Club Kokomo Rum, founded by Mike Love of the Beach Boys. I used their amazing Barrel Finished Rum in this cocktail, which is a blend of 8- and 10-year-old Jamaican, Barbadian and Dominican rums. This cocktail also features White Rum, Blue Curacao, Guava Nectar, Pineapple Juice, Lime Juice, Passion Fruit and Cinnamon Syrup for that spicy kick. Cream of Coconut (I used homemade, recipe below) is then infused to blend all the flavors together. I topped it off with whipped cream (think sea foam), grated nutmeg and a fun straw! You will definitely want to ride the waves and try this one out this summer, it’s the ultimate! Cheers!

Ingredients – Serves 1

  • 1 oz Dark Rum (Club Kokomo Barrel Aged)
  • 1 oz White Rum (Captain Morgan)
  • .5 oz Blue Curacao (Classico)
  • 1 oz Guava Nectar (Kerns)
  • .25 oz Pineapple Juice (Dole)
  • .25 oz Passion Fruit Syrup (BG Reynolds)
  • .5 oz Cinnamon Syrup (1 cup water + 1 cup sugar + 3 cinnamon sticks)
  • .25 oz Lime Juice
  • .5 oz Cream of Coconut (I can unsweetened coconut milk (13.66 oz) +1 cup sugar – Thai Kitchen)
  • Whipped Cream
  • Grated Nutmeg

Method

  1. Make the cinnamon syrup. Add 1 cup water and 1 cup sugar to a small saucepan. Add three cinnamon sticks and heat to a boil, stirring occasionally. Reduce heat and simmer for 3 minutes. Remove from heat and let cool. Once cool remove cinnamon sticks and transfer to a glass container. Keep in fridge for up to a month.
  2. Make the cream of coconut. Add 1 can of unsweetened coconut milk and 1 cup sugar to a small saucepan. Heat until the sugar is dissolved, stirring occasionally. Remove from heat and let cool. Transfer to a glass container. You can keep this in the fridge for 2 weeks.
  3. Make the cocktail. Add the dark rum, white rum, blue curacao, guava nectar, pineapple juice, passion fruit syrup, cinnamon syrup, lime juice and cream of coconut to a cocktail shaker with ice. Shake to combine at least 30 seconds. Strain into a hurricane glass with crushed ice.
  4. Garnish. Add whipped cream to the top and grate nutmeg over the whipped cream. Add a fun straw. Cheers!
